Massimo Costanzi
Massimo was born and raised in
Monte Castello di Vibio, Umbria.
His culinary expertise has developed as a result of a deeply-felt connection with nature and its bounty, together with the cooking traditions, flavours and customs that were instilled and passed down by his mother, Elisa.
His passion for cooking grew from these early beginnings. As a student, he filled his evenings by further developing his appreciation for the richness of the countryside. Urged on by his closest friends, he embarked upon the path of restauranteur, and in 2005 opened Il Grottino di Zio Toto. Located in a quiet and delightful area of Monte Castello di Vibio, he offers an intimate setting where one can savour and appreciate the loving attention that he gives to traditional Umbrian dishes that he enhances using local produce and flavours.

Through word of mouth, his reputation has grown so much that he was delighted, in 2008, and again in 2009, to be invited to participate in a national television programme, Geo & Geo.* He was also honoured, in recognition of clientele satisfaction, to be awarded the title, together with Gold Medal, of Best Cook in Umbria.
