"Melt in your mouth" Chocolate puddings
( This will make 18 servings)
Place the butter and chocolate into a pyrex bowl over a saucepan of water, and heat over a low flame, allowing the ingredients to melt.
Remove from heat, add sugar, then eggs, one at a time, using electric mixer at velocity 1. Then add flour and cornstarch.
When well mixed, place 70gr of mixture in individual aluminium forms, and leave to rest for a few hours in the fridge.
Heat oven to 200C, then place the puddings at lowest level and cook 8-10 minutes.
When cooked, turn out onto a plate and serve, dusted lightly with icing sugar, with a spoonful of vanilla ice cream.
The secret to success is having the puddings cooked on the outside and soft on the inside.
